Bringing together several delicious ingredients and spices, Couscous with chicken and feta is a great reminder of the fresh, tasty flavors of the Mediterranean. It’s a very versatile dish that works just as well for a speedy weekday lunch as it does for a laid-back weekend gathering. No matter if served warm or chilled, it’s light enough to refresh yet satisfying enough to fill you up! In addition to this being delicious, it also suits well for meal prepping, as it can last a few days in the fridge!

Considering the versatility of this recipe I opted for listing the ingredients I used time, as well as some extras that sometimes I like to add. With this said, I strongly recommend to try experiment with entirely new ingredients, you cannot go wrong!
Step 1: Cooking the chicken
We can start with the chicken! Put the chicken in a pan, then add salt, any spices you like and some chicken or vegetable stock to it. For the spices, we used umami and coriander, but this is up to personal preference!
You can also add a little water! Not only it will help the chicken remain tender as it cooks but later instead of draining it we will add it to the couscous when cooking it. We wouldn’t want to waste any of the delicious taste of the chicken mixed with our spices, after all! Cover it with a lid and start it on low or medium fire. We will cook the chicken slowly

Step 2: Couscous
Couscous cooks really fast, so we can take it on once the chicken is done or close to done! You can get pot, add a little water (around 100ml or 3.4 fluid ounces per serving) and bring it to boil. Once it’s boiling, also add the leftover water from the pan where we cooked the chicken, so the couscous will soak up all the taste that is left in it! Finally, you can add the couscous and let it boil until all the water has been absorbed. This will only take a few minutes!


Step 3: Couscous with Chicken and Feta
This is the last and easiest step – the only thing we have left to do is to put it all together! For this part, get a bowl and add the chicken, couscous, crumbled Feta, sun-dried tomatoes, coriander and any extras you want to try out. Finally, mix it all together, serve and enjoy this tasty meal!
